A Recipe and a Link to the Slim Fast Site [Jan. 25th, 2007|11:37 am]
ZUCCHINI AND SUMMER SQUASH SAUTE'

2 small or 1 large Zucchini
2 small or 1 large Yellow Summer Squash
1 T. Smart Balance Spread (butter substitute, available at Wal-Mart Supercenters)
OR 1 T. Butter

If using Smart Balance Spread, place it into skillet over med-high heat and allow
water to evaporate, about 1 minute. Meanwhile slice squash once lengthwise and then
slice into 1/2 circles, about 1/4 inch thick. Add squash to skillet and toss to
coat with the butter or Smart Balance. Cover and let cook for approximately 10
minutes. Uncover, toss again and cook approximately 5 minutes uncovered. Add salt
pepper or seasonings of your choice.

*Calories - about 160 (Butter recipe)
about 140 (Smart Balance recipe)

I've started my diet again. Since both kids are in school now, I have time to exercise properly - I've been working out at least one hour a day. I'm using Slim Fast and sort of going by the Diet Center guidelines - lean meat, lots of fruit and veggies. I started yesterday and I felt great this morning! Right now I'm kind of tired and I have a headache, but I think I need coffee! I haven't worked out yet today - we are snowed in, or maybe I should say "iced in" We had freezing rain lastnight and it is starting up again.

Ok, this is it. I have decided to go public with my attempts at a healthier lifestyle in hopes that it will help to keep me a bit more motivated. I've decided to start writing here every day about anything and everything diet and exercise related for one year and record my results in this life-long (at least for me) battle to lose weight and get healthier.

So, I'll start with some stuff from yesterday...

Breakfast: frozen waffle with 1 T. real maple syrup and Smart Balance Spread - approx. 180 calories.

Lunch: Fajita Salad (mixed lettuce,carrots,cabbage and fajita chicken strips) with Marzetti's Bistro Bleu Cheese dressing, cut with Malt Vinegar - 350-400 calories.

**Note to self - I've got to find a good LIGHT blue cheese dressing or make my own, that stuff is just too high in calories!

Snacks: Kashi 7 grain crackers, carrots, apple, orange juice,

EXERCISE TODAY - Whew! Here we go again! Ok, I decided to go to the park in the evening and let the kids ride their bikes while I did a "dance" routine to my Lazy Town music (just an aside - the park near us is very private, there is hardly ever anyone there when we are; I would never put any innocent passers-by through watching me "dance", after all, as Jay Jay the plane advises so sagely: "Make sure no one's watching you when you're going through wing-wiggling, wing-wiggling, well, you get the idea) There is a nice open-air sheltered area with concrete floor and a place to set my radio so it's great for working out.)
so that was the plan, but Trixie wanted to swing, and she couldn't swing by herself. So, I went off in a huff to swing her - but then I came up with an idea - I got her going on the swing then took off on a short jog around the park - she was never out of my sight, and when I got back I'd get her going again and take off running again - I think I got a pretty good workout this way. Later, Pixel came to the park and we played frisbee for awhile.

EXERCISE TIPS FOR TODAY -
*Just Get MOVING!!!
*If one type of exercise doesn't work out try to
figure out something else to do.

MY LIST OF IDEAS FOR EXERCISE TO DATE:

1. A Dance/Step workout in the dance room
2. Dance workout in the park while kids play
3. Jogging alternated with swinging Trixie ;)
4. Dance workout at home (fat chance)
5. Watch Sharon Mann or Cardio Blast and try to
keep up!

Supper: Baked Turkey, Mashed Potatoes (very small
serving) and Green Beans.
Snacks: couple of licks of healthy peanut butter
(Smucker's all natural)few bites of popcorn,
sip of orange juice and I did have a cup of
coffee in the evening. Oh, yeah, I also had
a bowl of Cheerios, no sugar, with 1/2 a
banana cut up in it.

MOTIVATIONAL THOUGHTS FOR THE DAY: (These are personal ones for me..personally. Make up your own, only you know what will motivate you)

1. There is a birthday dinner in June...
2. All of the nice clothes I have been saving
that I can't quite get into *groan*

Robert is getting ready for his trip to Ghana - he and Pastor Emmanuel plan to leave on September 15. I can't believe how God has provided the money for his trip - he already has over half of the money saved that he needs!

Today is Nathan's first day of 6th grade. I took him to school because Robert was once again searching for dress socks that matched... Seth was waiting for Nathan on the steps.

Leslie and the girls and Josh came to spend the night Tuesday night - mom came over for lunch on Wednesday. They left around 2:00 in the afternoon - Joyce and I went to pick Nathan up at the McKinneys, then went on to the community center to play basketball.

Mandy didn't show up at church so I had her class too last night - Robert took some of them to McDonald's (the older ones).

Joyce is still asleep... I've been having coffee and recording "Charlie and Lola" for her to watch later, and starting to clean the house...

Robert preached at ______ today. I cried. Not during his preaching - during the music... *sigh* I couldn't seem to quit...I was so glad I was sitting in the back.

We went out to lunch and then shopping for school clothes - Nate got a shirt with the Blues Brothers on it - it says "On a Mission From God" Ha! Ha! It could be prophetic...

Jake and Caleb came over to swim and ended up spending the night.

...gotta go, Joyce is awake from her nap.

a little bored...
a little tired...
shouldn'ta had coffee this late.
...Joyce is sick, she got a fever at church last night but I couldn't leave because I was working in the nursery. Took her to the doctor this morning, he said it's not serious, but she's been running a pretty high fever. We're alternating Tylenol and Ibuprofin and giving her sponge baths...
...Nathan is spending the night at Jacob's.
I should really get to bed, I'll probably be up later with Joyce...
...I sang her to sleep a little while ago - I couldn't believe she actually fell asleep with me singing - it was a medley of Jennifer Knapp tunes :-)

I was over at Terry and Linda's earlier, dropping off kids at the pool party. As I was standing in their kitchen, I noticed a post-it note that she had on the window: "Memory Making Moments"

Here is one of mine...

Jacob spent the night here lastnight. At about 11:30, Nathan asked if I could run them over to Jake's so he could pick up some stuff. We took the white car, (I hadn't put gas in the Jeep) although the a/c doesn't work. The stereo is awesome in the white car. We listened to 93.3,95.7, and 96.1. I decided to wait outside while the boys went in and got Jake's stuff together. The radio was playing, the night was beautiful - they don't have any big trees in their yard, so the moon seemed to be "right there where you could touch it". The basketball was right there, so I picked it up and shot baskets for a little while - Jake laughed a little when he came out and saw me - ha! Of course Nathan suggested a game and I told them to go ahead (I love watching them play - is there anything better than watching your son play a sport he's really good at? and Jacob is an awesome player too!) They both played excellently - Nate made two finger rolls and Jake made a shot from beyond the concrete...it was beautiful, the night was beautiful.... to them, it was just a game. To me....
...I always thought that there would only be one year that they wouldn't play against each other, but later in the car, Jacob said they don't play against public after 6th grade.
...so the guilt comes on again. Why, oh WHY did we take Nathan out of that school??? And why did we hold him back??? Oh, if only we could go back, I would insist on him staying there...well, I think so anyway...Oh if I could only go back to the very first, We should've never listened to their recommendation.
...oh, well, who knows but that maybe it worked out the way it was supposed to...I can't say anything against his school now - everyone there is so nice, Robert's happy, to be honest I don't know how we could've afforded the tuition of private school one more year...Well! I certainly didn't mean to drag all of this out again - I started this entry in order to remember a beautiful night and...

Ok, I swear this time I will write a complete entry - I will not leave this computer for anything (except to get more coffee) or unless Joyce cries for me, or...nope, that's pretty much it. Well, unless lazytown calls with a job offer...
Let's see, it's been so long since I last wrote...Life has been....life. This last cycle there were a couple of days I thought I was going under, but life goes on and I guess we get a "second wind" or something. I was such an emotional mess the other day - I find myself stopping all the time while writing here, wondering who might happen to read it - there's so much I want to write, to vent, if you will, but I don't know... Oh, well, let me completely change gears for a second, I headed this entry with Timothy Omundson..mmmmm, wow! Is it ok to say that he is HOT! I know most people (thinkin' of my sis) would not get it - actually, I don't know ANYONE I can talk to (except the sweet people on the livejournal lazytown site)Who can understand what I mean - I guess it started with Stefan Karl, and then I noticed that Timothy Omundson looks a lot like him..and now I can't stand the wait till 9 p.m. central Fridays on USA!!! I've watched that stupid cat episode 7 times over just to see his blue eyes one more time...

I've been a little depressed -it's hormones, but there were other things weighing on my mind too this time - but that was last week, and I wish I could bottle the way I feel now - cravings are gone, I feel like exercising, and..."Ohhhh that MAN!!!"

What else, what else... Jacob - oh, never mind, I just remembered I wanted to title this entry something else but since I already titled it Timothy Omundson (Oh, he is soooo HOT) I will just start a new one.
